Bone Broth!

Broth!!  I love broth.  I make broth almost every single week.  This post is about one of my latest broth escapades.  I will provide a more in depth “how-to…” guide for broth, but, broth is good, broth is good for you, broth supplies soooo many nutrients that our body craves and deserves but our modern Standard American Diet (SAD, yes most of our diets are SAD), does not contain many of these incredible nutrients.

My family has broth in some form everyday.  My daughter drinks broth as part of her breakfast.  When I do long fasts I will drink broth.  And we cook, and we cook, and we cook with broth.  Soups, or anything that calls for water we substitute BROTH.

We are lucky that we have an incredible local Farmers Market (Rittnehouse Farmers Market part of the Farm to City movement in the Philadelphia area).  Our favorite bones used to be chicken claws, but no one has any here.  But now we have an excuse to be creative.  Plowshare Farms has the most incredible pork products we have ever tasted (jowl bacon anyone?). From them we actually get a big bad of lamb bones.  Rineer farms always has great beef soup bones, and great chicken which we debone our selves when making other dishes and keep the bones.

What made this week’s bone broth so amazing is that we had beef bones, lamb bones, chicken bones, and a PIG’S FOOT!  Check-out the video below.
